Everyone has a favorite chicken salad recipe, but I guarantee this one is worth adding to your collection. The flavor is really amazing. This is always the first thing I make in the summer when our dill plants start to grow. It is great on plain or toasted bread, on croissants or in pita bread.

Chicken Salad

• 3 cups cooked chicken, shredded or diced

• 1/4 cup onion, diced

• 2 heaping tsp chopped fresh dill (or try your favorite herb, like thyme)

• 3/4 cup mayonnaise

• 3 tsp lemon juice

• 1 tsp Dijon mustard

• 1/4 t salt, or to taste

• ground black pepper, to taste

  1. Mix all ingredients together very well. Add salt and pepper to taste.

  2. Enjoy on bread with lettuce and tomatoes, or with crackers as a dip.
