What is a cheeseburger casserole? Well, it is basically all of the flavors of a cheeseburger put together into one easy to eat, and easy to prepare casserole! This is always a hit with our kids, and it is a great way to get 4 colors of vegetables into them with one meal. Feel free to switch the beef out for ground turkey, or even ground lamb!
1 lb ground beef
4 cups diced red potatoes
15 oz. can diced tomatoes, drained
1/2 cup relish (we prefer a relish that isn’t too sweet)
1 red onion, finely chopped
1/2 cup diced zucchini
2 cloves garlic, minced
1/4 cup mayo
1 T tomato paste
2 t. mustard
1 t. Worcestershire sauce
1 teaspoon salt
1/2 teaspoon ground pepper
1 cup shredded cheddar cheese (save for after baking)
Suggested Toppings: Lettuce, tomato, diced onion, ketchup, mustard, mayo, relish, sesame seeds
Brown the ground beef with the onion and zucchini until the meat is cooked and the onions are soft. Mix the rest of the ingredients together and spread in a 9x13 dish (sprayed with oil to prevent sticking). Bake at 350 degrees for approximately 1 hour or until the potatoes are soft. Sprinkle with the shredded cheese and return to the oven for a few minutes to let the cheese melt. Top with your favorite burger toppings and enjoy!
VARIATION:
Add crumbled, cooked bacon to the casserole mixture before baking to upgrade this to a Bacon Cheeseburger Casserole!
