By now it should be obvious that I like recipes that are quick, easy, and delicious. And this one fits the bill perfectly. The fajita mixture is made in the slow cooker, so it is perfect for busy families. It is also easily adaptable to fit the food preferences of everyone in your family.

Chicken Fajita Bowls

Fajitas

1.5 lb. chicken breasts (that is about 2 of our large chicken breasts…if using smaller ones, you may need 4), cut into strips

1 large yellow bell pepper, sliced

1 large orange bell pepper, sliced

1 white or yellow onion, sliced

1 package Carnitas Seasoning (we use Siete Brand)

2 limes

In the bottom of your slow cooker (either sprayed with cooking spray, or lined with a slow cooker liner) layer half of the bell pepper slices and onion slices. Arrange the chicken strips over the top of the peppers and onions, and sprinkle the carnitas seasoning evenly over the chicken. Top with the remaining peppers and onions. Squeeze both limes evenly over the top. Cook on high for 4 hours.

To Assemble the Bowls

We use the following when making our bowls, but feel free to swap them out for your favorite ingredients.

• Cooked whole rain rice (seasoned lightly with Everything Bagel Seasoning)

• Shredded Cheddar Cheese

• Avocados, sliced

• Lettuce

• Sour Cream

• Homemade Salsa (this makes it…definitely make this!)

Homemade Salsa Recipe

10 Roma tomatoes, cut in half, seeds removed

1 jalapeño, seeds removed

1 large onion, quartered

1 bunch cilantro, stems removed (optional)

2 limes, juice only

1 tsp salt

Place all ingredients in a food processor. Process until the salsa is your favorite consistency. Store in the refrigerator, and enjoy!
