When we can’t find our grill under a foot of snow, we usually resort to cooking our lamb chops in the crockpot. And this recipe is fantastic! We always end up with the most tender chops and meat that falls off of the bone. The broth that is left in the crock pot can also be used to make a delicious gravy if you are serving these with mashed potatoes.

Lamb Chops in the CrockPot

2 lb. lamb chops

2 onions, sliced

3 cloves garlic, minced

3/4 t. dried thyme

1 t. Italian seasoning

1/2 teaspoon salt

1/4 teaspoon ground pepper

Line the bottom of your crockpot with the onion slices. Place the chops on top of the onions and cover with all seasonings and garlic. Cover and cook on low for 4-6 hours or until meat is tender.
