If I had to choose my favorite chicken part, it would be these leg quarters. A leg quarter is the thigh and drumstick still connected, so it is basically all of the dark meat in one juicy piece. And this would be my favorite way to cook them if I had to choose one recipe. This recipe is SO easy. In fact, it’s so easy that my kids will frequently take over and make it with only help from us with the oven. It can be prepped in about 5 minutes, so it’s the perfect meal for busy nights - but it looks like a gourmet meal. And it definitely tastes like one too. If you prefer white meat, this works well with other cuts of chicken too.

INGREDIENTS:
6 Chicken Leg Quarters
1 Tablespoon olive oil
2 tsp minced garlic
1/2 tsp. Black pepper
1 tsp chili powder
1/2 tsp basil
1/2 tsp oregano
1 Tablespoon paprika
1 Tablespoon salt
VEGETABLES:
1 lb. small red potatoes, quartered
1/2 lb. radishes, quartered
1 head of broccoli, diced into 1 inch pieces
1 large onion, cut into 1 inch pieces
DIRECTIONS:
Preheat oven to 400 degrees.
Mix the seasonings together in a bowl and add the olive oil. Mix well to form a paste.
Arrange the chicken on a large rimmed baking sheet. Pat the chicken dry using paper towels. Using 1/2 of the seasoning mix, coat the chicken well.
Use the rest of the seasoning mix to coat the veggies. Spray a large baking dish and add the seasoned vegetables.
Bake both for 40-60 minutes or until the vegetables are soft and the chicken is at least 160 degrees.
