Lamb Kofta is a mix of ground lamb, onion, garlic, and seasonings. It is typically formed and cooked on skewers. This recipe comes together quickly, it has a great flavor, and the lamb stays so juicy. This is also a very forgiving recipe…you can change, omit, or add different seasonings. We like to serve ours with tzatziki sauce, rice, and pasta salad. It is a great recipe for both a quick weeknight meal and for when you have a house full of guests.
Lamb Kofta Kebobs
Recipe makes 8 small kebabs. We recommend 2 kebabs per person.
Ingredients
1 lb ground lamb
3 tsp minced garlic
1 small, finely diced onion (or 3 T. Dried minced onion)
1 tsp cumin
2 tsp dried dill (or 2 T fresh dill)
2 tsp dried parsley (or 2 T fresh parsley)
1/2 tsp salt
1/2 tsp black pepper
Directions
Add all ingredients to a large bowl and mix well.
Divide mixture into 8 equal balls.
Stick a bamboo skewer through each portion and mold the meat into longer, “hot dog” shapes on the sticks.
Grill over medium-high heat for 3-5 minutes, turning once, until your level of doneness is achieved. *For medium-well done, lamb should be cooked to 145º. For medium, lamb should be cooked to 135º.
