I take this soup everywhere, and I have served it so many times….and I always have people asking for the recipe. So if you are one of those, here it is! This tastes just like lasagna, but it is so much easier to make. We usually use our ground pork sausage to make it, but we have also used our ground turkey sausage, and it also works really well. Feel free to try different cheese toppings or even omit the ones you don’t want.

Lasagna Soup

1 lb. ground pork sausage (or ground turkey sausage)

1 medium diced onion

2 garlic cloves minced

6 cups chicken broth

2 T tomato paste

2 15 oz. cans fire roasted diced tomatoes

2 T Italian seasons (or substitute with a mixture of fresh Italian herbs)

1/2 t. Salt

1 8 oz. box of pasta (any small size will work. Our favorite shape for this is bow-tie)

Toppings:

ricotta cheese

parmesan Cheese

shredded mozzarella Cheese

Instructions:

Brown the sausage with the onion until cooked through. Add to your slow cooker. Add the rest of the ingredients except for the pasta. Let cook on low for 4 hours. 20 minutes serving, add the pasta and stir well. Serve with the toppings in separate bowls so everyone can add what they want. The toppings really make this soup! Enjoy!

*This soup can also be made on the stove top. After browning the sausage and onions in a large Dutch oven, add everything except the pasta and allow to simmer on low for 30-60 minutes before adding the pasta. Serve as soon as the pasta is al dente.
