My family loves meatloaf anyway, but there is something about making them miniature sized that really gets them excited about dinner. And I love this recipe because everything is made and baked on one pan so there is less clean up. Feel free to change up the veggies on the tray - we often add brussels sprouts, onion slices, and broccoli to the suggestions below.
1 lb ground turkey (or ground beef)
1 T dehydrated minced onion
1 large egg
1/4 c dried bread crumbs
1/4 t salt
1/2 c barbecue sauce
1/2 c shredded cheddar cheese
1/4 c milk
3 carrots, cut into 1/2 inch chunks
3 large potatoes, cut into 1/2 inch chunks
Extra bbq sauce to brush on the meatloaves
Preheat oven to 375 degrees. Mix the ground turkey with the next 7 ingredients. Mix well and form into 6-8 mini balls or loaves. Place them on a greased cookie sheet and surround with the potatoes and carrots. Bake for 25-30 minutes or until cooked through. Brush extra bbq sauce on the meatloaves before serving.
