The middle of June means we have more strawberries and mint than we know what to do with around here. After we have filled our freezers with strawberry jam, eaten about 5 strawberry pies, and made my girls’ favorite strawberry cupcakes, Brandon and I turn to these Strawberry Mojitos. They are so refreshing, and they are the perfect drink to relax with after a hard day of farm work. The kids love them without the rum too!

Strawberry Mojito

  • 2 large limes

  • ½ bunch mint leaves

  • 1 1/2 cups strawberries, finely diced (a food processor works well too)

  • 1/2 cup white sugar

  • 1 cup white rum

  • 2 cups club soda

  • 8 cups ice cubes

In a bowl, mix the sugar and mint leaves. Use a muddler to crush the leaves and sugar (this releases the oil from the mint leaves). Squeeze all of the lime juice into a glass pitcher. Add the strawberries and sugar/mint mixture. Stir in the rum and club soda. Mix well and pour into glasses over ice. Garnish with mint leaves.
