Do you want to cook a REALLY great steak at home? This recipe is so easy, and it is the best way to cook a steak. It always produces a perfectly cooked steak with a tender, juicy center and a crisp outer crust. Basically a steak that tastes like it came straight out of a world-class steak house.
2 Steaks of your choice (boneless steaks work well for this method of cooking - bone-in steaks can be more difficult to cook evenly)
2 Tablespoons butter
4 t. Minced garlic
1 large sprig of Rosemary (or use minced, dried)
Salt and pepper to taste
30 minutes before cooking the steaks, pat them completely dry and sprinkle all sides with salt. Let them rest.
Heat a large, heavy cast iron skillet over high heat until the pan is very hot.
Add the steaks to the hot pan and sear them for approximately one minute on each side. The sides should get a crispy, golden crust - flip them so they don’t burn.
Add the butter and seasonings to the pan and continue to cook your steaks until their desired doneness is reached - be sure to keep turning your steaks every minute or two to avoid burning.
Season with salt and pepper and spoon the excess garlic butter over the steaks before serving.
For safety, steaks should be cooked to at least 145 degrees. For medium-rare cook until 145 degrees, for Medium cook until 160 degrees, and for Well-Done cook until 170 degrees. However, remember that meat will continue to cook and increase about 5 degrees after being removed from the pan - so you may want to pull your steak off a bit sooner.
