On those nights when we are really busy and dinner has to be on the go, we love to make our own Walking Tacos. It may not have quite the same charm as eating Walking Tacos at the county fair, but these are so much healthier and they are so good! And the best part is that everyone can make theirs the way they want, and they have their dinner with them when we need to get out of the house quickly. At the end of the recipe I added what I do to switch these up to make a bowl - to- go instead. This eliminates the chips and makes them even healthier.
Meat Mixture:
1 lb. ground turkey breast, browned
1 white onion, diced
1 red bell pepper, diced
1/4 cup water
1 packet taco seasoning (we like Siete brand)
Toppings:
Dorito bags
Shredded cheese
Salsa
Roasted corn
Black beans
Sour Cream
Guacamole
Lettuce
Lime wedges
In a large crockpot, combine all meat mixture ingredients. Cook on low for 4-6 hours until the vegetables are soft.
Cut the top off of each Dorito bag, squeeze the bags to crush the chips, and add a large spoonful of the meat mixture to each bag.
Add toppings to each bag, and enjoy!
Note - I often skip the Doritos and put the meat mixture and other toppings on a bed of lettuce to make a bowl instead - still delicious and more nutritious! Make sure to squeeze the lime on top…I personally think it adds a lot! Any kind of a to-go container works well for this too…a mason jar, a lunch salad bowl, tupperware containers, really anything. And If you aren’t eating it immediately, put the meat in the bottom of the container and add the other ingredients on top.
